I'm a self-admitted coffee snob, reluctant runner and pawrent to a very energetic Sproodle called Archie.
I've always dreamed of opening my own coffee shop so when I moved to Bury St Edmunds in 2019 and saw how much encouragement there was for local small businesses, I decided that 2020 would be the year to finally realise my dream.
But then, in early 2020, the coronavirus happened. Suddenly lockdown, quarantine and social distancing became the new reality and many traditional food businesses and restaurants were devastated by the fall out.
Instead of being discouraged, I came up with an innovative way to still make my dream come true - a mobile cafe run from a converted horsebox trailer.
I set about looking for a pre-loved horsebox and sharpened my DIY skills.
2 months (and quite a few band-aids!) later, my beautiful horsebox ‘Beryl' was ready!
I’ve been lucky to have help and support from some incredible people along the way.
Weekday mornings you can find Beryl and I at Bury St Edmunds Train Station serving up great coffee and scrumptious cakes.
